Zucchini Muffins Recipe

  • 6 farm-fresh eggs
  • 1 cup self-raising flour
  • 3 medium zucchinis, grated (375g)
  • 1 large onion, finely chopped
  • 60ml (¼ cup) vegetable oil or oil of choice
  • 1 cup grated cheddar cheese
  • Salt and pepper to season

Method

1. Preheat oven to 175°C.

2. Mix all ingredients together in a large bowl, in no particular order.

3. Spoon the mixture into muffin trays, filling them to the top.

4. Sprinkle extra cheese and bacon on top for extra flavor.

5. Bake for 30 minutes, or until golden and firm to the touch.

6. Let stand in the tray for 5 minutes, then transfer to a wire rack to cool.

7. Serve and enjoy!
