Zucchini Chocolate Brownies Recipe

Easy to make and packed with flavor, they’re a great way to sneak some veggies into your dessert. Serve them as a treat for yourself or impress your guests with this unique and tasty dessert that’s sure to become a new favorite!





  • 1/2 cup coconut oil, melted
  • 3/4 cup caster sugar or substitute
  • 2 tsp vanilla extract
  • 1 egg
  • 1/2 cup dark chocolate chips
  • 2 cups self-raising flour
  • 1/2 cup cocoa, sifted
  • 2 cups zucchini, grated


1. Preheat oven to 160°C fan forced. Grease or line a 30 x 20 cm slice tin with baking paper.

2. In a large bowl, whisk together coconut oil, sugar, vanilla, and egg until smooth. Stir chocolate chips through the mixture.

3. Gently fold flour and cocoa through the wet ingredients, mixing until just combined. Don’t be concerned if the mixture looks dry as the zucchini will add moisture.

4. Add the grated zucchini and stir through. Let it sit for a few minutes. Stir the zucchini and chocolate mixture again until well combined.

5. Pour the mixture into the prepared slice tin. Bake for 25 minutes, or until just cooked through. Cool in the tin. Makes 20.
