Veggie Loaded Pasta Recipe

This tasty vegetarian pasta dish is perfect for workday lunches!





  • 500g spiral pasta
  • 1 brown onion, thinly sliced
  • 1 garlic clove, crushed
  • 1 red capsicum, deseeded and thinly sliced
  • 2 carrots, peeled and roughly chopped
  • 400g Perino tomatoes
  • 2 zucchinis, roughly chopped
  • 1 teaspoon dried Italian herbs
  • 4 cups vegetable stock
  • 120g baby spinach
  • 1 long red chili, thinly sliced


1. In a large saucepan, combine the pasta, onion, garlic, capsicum, tomatoes, carrot, zucchini, dried herbs, vegetable stock, and 2 cups of water.

2. Place the saucepan over medium heat and bring to a simmer. Cook, stirring often, until the pasta is al dente.

3. Add the spinach and chili, and stir to combine. Season to taste with salt and pepper. Serve and enjoy.
