Super Greens & Chicken Pasta Recipe

This Chicken and greens pasta dish is the perfect healthy weeknight meal that’s still as comforting as a warm bowl of pasta always is!

  • 375g dried penne pasta
  • 2 bunches asparagus, trimmed and cut into thirds
  • 150g fresh broccoli florets
  • ½ cup frozen peas
  • 2 tbsp olive oil
  • 8 chicken tenderloins
  • 200g hummus
  • 1 avocado
  • 1 tbsp fresh lemon juice
  • ½ cup fresh continental parsley leaves
  • ½ cup fresh basil leaves
  • Lemon wedges, for serving

Method

1. In a large saucepan of boiling salted water, cook the pasta according to the packet directions. Add the asparagus, broccoli, and peas in the last 2 minutes of cooking. Drain the pasta and vegetables, reserving ½ cup of the cooking liquid. Return the pasta mixture to the saucepan.

2. While the pasta is cooking, heat the olive oil in a frying pan over medium-high heat. Cook the chicken tenderloins for 3 minutes on each side or until golden and cooked through.

3. While the chicken tenderloins are cooking, place the hummus, avocado, lemon juice, parsley, and basil in a blender. Blend until smooth.

4. Transfer the hummus mixture and ⅓ cup of the reserved cooking liquid to the pasta and vegetable mixture in the saucepan. Add more of the reserved cooking liquid if the sauce is too thick. Toss until combined. Season with salt and pepper to taste.

5. Dish up the pasta and vegetable mixture into serving bowls and top with the chicken tenderloins.

6. Serve with lemon wedges. Enjoy!
