Seasonal Sprouts Recipe

  • 500g Brussels sprouts, ends trimmed
  • 2 tablespoons brown sugar
  • 2 tablespoons orange marmalade
  • 3 streaky bacon rashers, roughly chopped
  • ⅓ cup toasted hazelnuts, chopped

Method

1. Preheat oven to 200°C and line a baking tray with baking paper.

2. In a large bowl, combine the Brussels sprouts, brown sugar, and marmalade. Season with salt and pepper to taste.

3. Arrange the Brussels sprouts evenly on the lined tray.

4. Place the tray in the oven and roast for 20 minutes.

5. After 20 minutes, turn the Brussels sprouts to ensure even roasting.

6. Continue roasting for a further 20 minutes until the Brussels sprouts are tender and caramelized.

7. While the Brussels sprouts are roasting, cook the bacon in a frying pan over medium heat until crisp.

8. Transfer the cooked bacon to a paper towel-lined plate to drain excess fat.

9. Remove the Brussels sprouts from the oven and transfer them to a serving bowl.

10. Add the crispy bacon and chopped toasted hazelnuts to the Brussels sprouts.

11. Toss the mixture gently to combine all the ingredients.

12. Serve and enjoy!
