Poached Raspberry Pears Recipe

  • 1/3 cup caster sugar
  • 2 cups apple, cranberry, and raspberry juice
  • 4 Packham pears, peeled
  • 1 vanilla bean, split
  • 150g raspberries
  • Double cream, to serve


1. In a saucepan, combine the caster sugar and juice over medium heat. Cook, stirring, until the sugar has dissolved.

2. Place the peeled pears in the bowl of a 5-litre slow cooker and pour the sugar syrup over them. Add the split vanilla bean. Cover the slow cooker and turn it to high. Cook for 1 hour and 15 minutes, turning the pears halfway through the cooking time.

3. Add the raspberries and cook for a further 15 minutes or until the pears are tender. Serve the pears with the syrup, raspberries, and double cream.
