Oven Baked Lemon Butter Salmon Recipe

Quick and delicious, this meal will be ready to eat in 30 minutes!





  • 40g butter
  • 1 garlic clove, crushed
  • 1 tsp lemon rind, finely grated
  • 2 bunches asparagus, trimmed
  • 4 salmon fillets, skinless and boneless
  • 2 tbsp dill
  • 1 lemon
  • 4 slices ciabatta


1. Preheat oven to 200°C (180°C fan-forced). On a small chopping board, place the butter, garlic, and lemon rind, and mash together using a fork.

2. Tear four 30cm square sheets of foil and line each with baking paper. Divide the asparagus among the centers of the paper. Top each portion of asparagus with one salmon fillet. Scatter small dollops of the butter mixture over each parcel. Season with salt and pepper.

3. Fold the foil and paper to enclose the filling, sealing tightly on each end. Place the parcels onto a large baking tray and bake for 15-20 minutes. When done, the salmon should flake easily when tested with a fork.

4. Open the parcels and top with dill. Serve with lemon wedges and crusty bread. Enjoy!
