One Pan Zucchini Spaghetti With Bolognese Recipe

This speedy one pot dish is veggie and flavour loaded!





  • 1 brown onion, finely chopped
  • 1 carrot, peeled and finely chopped
  • 2 garlic cloves, peeled and finely chopped
  • 2 tbsp olive oil
  • 1 1/2 tsp dried oregano leaves
  • 500g lean beef mince
  • 1 tbsp tomato paste
  • 500g jar bolognese pasta sauce
  • 2 x 250g packets zucchini spaghetti
  • 1 cup mozzarella, grated
  • Fresh oregano leaves to serve


1. Heat 1 tbsp of oil in a deep, ovenproof frying pan over high heat. Add the onion, carrot, garlic, and 1 tsp of dried oregano. Cook, stirring occasionally, for 3 minutes or until softened.

2. Add the beef and the remaining oil. Break up any lumps with a wooden spoon and cook for 3 minutes or until browned. Stir in the tomato paste and cook for 1 minute or until combined.

3. Stir in the pasta sauce. Cover and cook for 2 minutes. Gently stir in the zucchini spaghetti and cook for a further 2 minutes, covered. Remove the pan from heat.

4. Preheat the oven grill to high. Sprinkle the bolognese with the remaining dried oregano and mozzarella. Grill for 2-3 minutes or until the cheese is golden and melted. Top with fresh oregano.
