This is a cosy Creamy Pasta Bake “formula” you can make with what you’ve got! Based around a creamy white sauce that makes anything delicious with what you have left over in the fridge.

  • 1 kg Lamberts fresh mince
  • 1 x 700ml passata sauce
  • 1 x 400g can diced tomatoes
  • 1 x packet penne pasta
  • 2 tablespoons tomato paste
  • 1 x red capsicum
  • 100g Western Star butter
  • 600ml Mungalli cream
  • 1 x brown onion
  • 2 x small zucchinis
  • 2 x medium carrots
  • 4 x garlic cloves
  • 500g shredded tasty cheese
  • 100g plain flour
  • Salt and pepper to season

Method

1. Boil 600ml water. Add pasta and cook for 6–7 minutes. Add a good pinch of salt to the water.

2. In a frypan, brown the mince with 2 tablespoons of olive oil and diced onion. Stir for 2 minutes. Then add garlic, diced capsicum, zucchini, and carrot. Stir for 5 minutes until the vegetables soften. Add 2 tablespoons of tomato paste and stir for 2 minutes. Add passata and tinned tomatoes, and bring to a low simmer for 20 minutes. Add the drained pasta to the mince mixture and stir well.

3. For the white sauce: In a saucepan, melt 3 tablespoons of butter. Add 3 tablespoons of flour and stir to make a paste. Gradually add 600ml of cream and 2 tablespoons of tasty cheese. Stir until the sauce reaches a thick consistency, then take it off the heat.

4. Preheat the oven to 180°C. In a large, greased baking dish, add 2–3 generous spoons of the mince mixture and spread evenly over the bottom. Add 2–3 spoons of white sauce and spread evenly over the mince. Repeat the process until all the ingredients have been evenly added to the baking dish. Sprinkle the remaining cheese to cover the top of the dish. Place in the oven and bake until golden brown, approximately 20–30 minutes in a 180°C fan-forced oven.

5. Let cool slightly. Serve and enjoy! Bon appétit!
