Mixed Berry & White Chocolate Cheesecake Recipe

The perfect mix of sweet and sour, our Mixed Berry & White Chocolate cheesecake is a dessert that will leave you wanting more.





  • 12 white chocolate & macadamia nut biscuits
  • 300g frozen mixed berries
  • 3 1/2 tsp powdered gelatine
  • 180g white chocolate, roughly chopped
  • 2 x 250g cream cheese blocks, softened
  • 1/3 cup caster sugar
  • 1 tsp vanilla extract
  • 185ml canned evaporated milk


1. Line the base and sides of a 6cm-deep, 22cm round pan with baking paper.

2. Arrange the biscuits in a single layer over the base of your pan. Place half of the berries on top.

3. Boil water and place it into a small, heatproof jug. Sprinkle over the gelatine and whisk with a fork until the gelatine has dissolved.

4. Put your chocolate into a heatproof, microwave-safe bowl. Microwave, uncovered, on high (100%) for 1 to 2 minutes, stirring every 30 seconds, or until melted and smooth. Set aside.

5. Use an electric mixer to beat the cream cheese, sugar, and vanilla until smooth. Gradually beat in the evaporated milk, melted chocolate, and gelatine mixture.

6. Pour the cream cheese mixture into your lined pan and scatter with the remaining berries. Cover and refrigerate overnight or until set.
