Mexican Style Pasta Salad

Mexican Style Pasta Salad Recipe

A tasty side dish that the whole family will enjoy!





  • 2 cups dried pasta spirals
  • 2 corn cobs, silk and husks removed
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • 200g grape tomatoes, quartered
  • ½ red onion, finely chopped
  • 1 avocado, diced
  • ½ cup fresh coriander leaves
  • ¼ cup lime juice
  • 1 tbsp olive oil
  • ½ tsp Tabasco sauce


1. In a large saucepan of salted water, cook the pasta according to the packet directions. Drain and rinse under cold water.

2. While the pasta is cooking, place the corn on a microwave-safe plate. Microwave on high for 4 minutes. Set aside until cool enough to handle. Carefully cut the kernels from the cob.

3. In a large bowl, combine the pasta, corn kernels, red capsicum, green capsicum, grape tomatoes, red onion, avocado, and coriander.

4. In a screw-top jar, combine the lime juice, olive oil, and Tabasco sauce. Secure the lid and shake well to combine. Drizzle the dressing over the salad.

5. Season the salad with salt and pepper. Toss to combine. Serve and enjoy!
