  • 8 Granny Smith apples, peeled, cored, and sliced
  • ½ cup sultanas

Apple Mixture

  • 2 teaspoons coconut flour
  • 1 lemon, juiced
  • ¼ cup white sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla sugar
  • ¾ teaspoon ginger, finely grated
  • 2 teaspoons coconut oil, broken up into small pieces

  • ½ cup plain coconut
  • ½ packet Leda Anzac biscuits, slightly crushed
  • ¼ cup coconut sugar
  • ¼ cup desiccated coconut
  • ¼ cup walnuts, finely chopped
  • Pinch of salt
  • ⅓ cup coconut oil

1. Preheat oven to 150 degrees Celsius.

2. Spray a 20cm round, 16x20cm rectangle, 1L, or similarly sized baking dish with cooking spray.

3. For the apples: Toss the apples, sultanas, and lemon juice in a large microwave-safe bowl. Add the remaining ingredients (except the coconut oil) and mix gently with the apples. Microwave on high for 5 minutes to soften. Place the apple mixture in the casserole dish and sprinkle with the coconut oil bits.

4. For the crumble: Combine all dry ingredients, except the walnuts and Anzac biscuits, in a bowl. Rub in the coconut oil until the mixture resembles breadcrumbs. Add the walnuts and Anzac biscuits and gently mix. Lightly sprinkle the crumble over the apples.

5. Bake for 30 minutes or until the apples are softened. (Test with a kebab stick or skewer.)

6. Serve warm with gluten-free and dairy-free cream, ice cream, custard, or yoghurt!
