Kiwi BBQ Lamb & Roast Pumpkin Pizza Recipe

Aussies make jokes about us Kiwis and the sheep – but this pizza is sweet as!! This is pizza perfection and so easy to make. And who doesn’t love the taste of Sunday roast on a pizza.

Ingredients

  • 1 pizza base
  • Beerenberg BBQ sauce (enough to smear the base using the back of a spoon)
  • ½ red onion, sliced
  • Baby spinach (a good handful)
  • ¾ cup grated cheese
  • 200g lamb steak (or equivalent), cooked medium rare and diced, preferably BBQ’ed
  • 250g roasted pumpkin, skin on, chopped
  • 2 tablespoons Greek feta, finely chopped (or feta crumble)
  • ¾ cup grated cheese
  • 2 dessertspoons fresh rosemary, picked and chopped

Method

1. Preheat oven to 200 degrees Celsius, or pizza oven to 300 degrees.

2. Build pizza in the order that ingredients are listed above.

3. Place pizza on a lightly floured pizza stone.

4. Cook until edges start to brown (approx. 15 minutes).

5. Rest, then cut into 8 pieces.

 

Note:

  • Lamb can be any chops, leftover roast lamb, or pulled lamb.
  • Cook “extra” roast pumpkin when doing the Sunday roast!
  • To roast the pumpkin in an air fryer: toss pieces in olive oil, garlic salt, and cracked pepper, then cook.
