  • ½ cup golden syrup
  • ¾ cup dark brown sugar
  • 2 garlic cloves, sliced
  • 6cm piece fresh ginger, peeled and sliced
  • 8kg cooked leg ham
  • 12 small oranges, peeled and thinly sliced
  • Wholegrain mustard, for serving
  • ½ cup orange juice

1. Preheat oven to 180°C (160°C fan-forced).

2. In a small saucepan over medium-high heat, combine the golden syrup, dark brown sugar, orange juice, garlic, and ginger.

3. Cook the mixture, stirring, until the sugar is dissolved.

4. Bring the mixture to a boil, then reduce to medium heat.

5. Simmer the glaze until slightly thickened, then remove from heat and transfer to a heatproof bowl.

6. Using a small sharp knife, cut through the ham rind about 8cm from the shank.

7. Remove the rind from the ham by starting at the opposite end to the shank, running your thumb under the rind to separate it from the fat.

8. Peel back and remove the rind completely.

9. Wrap the shank end of the ham in foil.

10. Place the ham on a lightly greased wire rack in a large roasting pan.

11. Brush the ham with a thin layer of the prepared glaze.

12. Arrange the orange slices over the ham, allowing some to overlap.

13. Brush the orange-covered ham with another thin layer of glaze.

14. Place the ham in the preheated oven.

15. Bake for 1 hour and 30 minutes, basting every 15 minutes with the remaining glaze.

16. Once the ham is golden and caramelized, remove it from the oven.

17. Discard the foil from the shank end.

18. Serve the ham with wholegrain mustard and enjoy.
