Christmas Stocking Chicken Recipe

A stuffed chicken breast on a bed of lettuce.

This stuffed chicken dish is much like a Xmas stocking on Christmas morning, stuffing that is like a present inside.





  • 3 red capsicums
  • 1 tablespoon olive oil
  • 2 bacon rashers, finely chopped
  • 30g butter
  • 1 brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 cups breadcrumbs
  • 5 pitted marinated green olives, finely chopped
  • 1 lemon, rind finely grated
  • 2 tablespoons fresh continental parsley, chopped
  • 5 single chicken breasts


1. Preheat oven to 200°C. Line a baking tray with non-stick baking paper.

2. Brush the capsicums with half of the olive oil. Bake for 45 minutes, turning occasionally. Set aside to cool. Peel and seed the capsicums and cut into thick strips.

3. In a frying pan, cook the bacon over medium-high heat until golden. Transfer to a separate bowl.

4. Reduce the heat to medium. Add the butter and onion to the pan and cook until the onion is transparent and soft.

5. Add the garlic and cook until aromatic.

6. Add the onion mixture, breadcrumbs, olives, lemon rind, and chopped parsley to the bacon. Season to taste and mix to combine.

7. Starting from the thick side, cut each chicken breast in half horizontally, keeping the tenderloin attached to one half.

8. Place 1 piece of chicken between 2 sheets of baking paper. Use a rolling pin to gently pound the chicken until 1 cm thick. Repeat with the remaining chicken.

9. Top each chicken piece with some capsicum and 2 tablespoons of the breadcrumb mixture.

10. Roll up to enclose the filling and use kitchen string to tie each roll at 2 cm intervals to secure.

11. Preheat oven to 200°C (if not already done). Heat the remaining olive oil in a large frying pan over high heat.

12. Cook half of the chicken rolls until golden. Then, transfer to a baking tray and bake for 15 minutes.

13. Repeat the cooking process for the remaining chicken rolls if necessary.

14. Serve and enjoy.
