Asian Style Mango Salad Recipe

  • 1/4 small wombok, shredded
  • 1/4 small red cabbage, shredded
  • 3 green onions, trimmed and roughly chopped
  • 1 large mango, peeled and thinly sliced
  • 12 lychees, peeled, pitted, and halved
  • 1/2 packet crunchy noodles
  • 1/2 tsp roasted sesame seeds

 

For the Asian Dressing

  • 1/4 cup vegetable oil
  • 1 tsp sesame oil
  • 1 1/2 tbsp rice wine vinegar
  • 1 1/2 tbsp caster sugar
  • 2 tsp soy sauce

Method

1. Place both cabbages, onion, mango, and lychees in a large bowl and toss to combine.

2. To make the Asian dressing: Whisk together the vegetable oil, sesame oil, rice wine vinegar, caster sugar, and soy sauce in a bowl.

3. Toss the dressing through the salad mixture to combine. Add the crunchy noodles just before serving and sprinkle with sesame seeds. Serve and enjoy.
