When selecting persimmons at the store, look for fruits that are deep orange and free from blemishes. The two most common varieties are Fuyu and Hachiya. Fuyu persimmons are squat and firm, perfect for eating while still crisp. Hachiya persimmons are more elongated and should be very soft before eating to avoid their natural astringency. To ripen your persimmons faster, you can leave them on the counter or store them in a paper bag with an apple or banana. Avoid persimmons with greenish-yellow skin as they are not fully ripe yet.
